They may be all the buzz on social media, but nothing about their kitchen skills are trending. The challenges are more outrageous than ever with games inspired by the latest social media trends and viral moments like Poke-Bowl-Go, Cake or Fake and Ice-Bucket Trivia. Anne and Darnell will have eight weeks to transform them from kitchen zeroes to culinary heroes, and the last recruit standing will walk away with a $25,000 prize while their mentor wins ultimate bragging rights. Cinnamon Swirl Swiss Roll Cake with Cream Cheese Buttercream, Bourbon Caramel and Pecans RECIPE COURTESY OF DARNELL FERGUSON Level: Intermediate Total: 1 hr 10 min Active: 50 min Yield: 1 cake Ingredients Cake: 4 large eggs, separated 1/4 teaspoon cream of tartar 1 1/4 cup all-purpose flour 1/2 teaspoon baking powder 2 1/2 teaspoons ground cinnamon 6 tablespoons softened unsalted butter 1/2 cup brown sugar 1/2 cup granulated sugar 2 teaspoons vanilla extract 1/4 cup milk 3 tablespoons canola oil 3 drops red gel food coloring Nonstick cooking spray Cream Cheese Buttercream: 3 cups powdered sugar, plus more for cake 2 sticks (16 tablespoons) room temp unsalted butter 4 ounces cream cheese 1 teaspoon vanilla extract Bourbon Caramel Topping: 1/2 cup bourbon One 17-to-20-ounce jar caramel sauce Whole, stemmed strawberries, to decorate Chopped pecans, to decorate Multicolor sprinkles, to decorate Directions Preheat the oven to 350 degrees F. For the cake: Put the egg whites in a stand mixer with a whisk attachment. Whip the egg whites with the cream of tartar until stiff peaks. Remove to a bowl and wipe out the stand mixer bowl. Meanwhile, sift together the flour, baking powder and 1/2 teaspoon of the cinnamon and reserve. Cream together the butter and both sugars in the clean stand mixer bowl with the paddle attachment. Add the egg yolks and vanilla. Measure the milk with the oil in a liquid measuring cup. Alternate adding the oil/milk and the sifted dry ingredients to the creamed butter and sugar until thoroughly combined. Fold in the egg whites. Divide the batter into 3/4 and 1/4. Add the remaining 2 teaspoons cinnamon to the 3/4 and mix in the red gel coloring to the 1/4. Spread the white cake on a parchment-lined sheet pan sprayed with nonstick cooking spray. Then pour over the red batter over top in 4 rows of 3 blobs. Use a toothpick to make marbling swirls throughout. Bake until it springs back, about 12 minutes. For the buttercream: Add the powdered sugar, butter, cream cheese and vanilla to a bowl and mix together with a hand mixer until well combined. Remove the cake from oven and, while hot, sprinkle powder sugar on top of the cake. Lay a towel on top, then another sheet pan. Flip onto the towel, sprinkle more powdered sugar on top of the cake, roll it up and let cool 15 to 20 minutes. Unroll the cake, fill with the buttercream with big offset spatula and then re-roll the cake using the towel to help you. For the bourbon caramel: Combine the bourbon and caramel in a pot over low heat for about 5 minutes. Remove from the heat. Make strawberry flowers by cutting slits in the top with a paring knife. Decorate the top of cake with the sauce, pecans, sprinkles and strawberry flowers.
