They may be all the buzz on social media, but nothing about their kitchen skills are trending. The challenges are more outrageous than ever with games inspired by the latest social media trends and viral moments like Poke-Bowl-Go, Cake or Fake and Ice-Bucket Trivia. Anne and Darnell will have eight weeks to transform them from kitchen zeroes to culinary heroes, and the last recruit standing will walk away with a $25,000 prize while their mentor wins ultimate bragging rights. Sesame Skirt Steak with Coconut Lemongrass Rice Bowl RECIPE COURTESY OF DARNELL FERGUSON Level: Intermediate Total: 1 hr Active: 1 hr Yield: 4 servings Ingredients Coconut Cilantro Rice: 1 1/2 cups jasmine rice 1 1/4 cups chicken stock 1/2 cup coconut milk 1 stalk lemongrass (about 1 tablespoon minced) Kosher salt 1 tablespoon chopped cilantro Sesame Glaze: 1/2 cup hoisin 1/4 cup soy sauce 2 tablespoons water 1 tablespoon toasted sesame oil 1/2 teaspoon 5-spice powder 4 cloves garlic, rough chopped 1/2-inch piece fresh ginger, peeled and minced Steak: 2 tablespoons brown sugar 1 tablespoon paprika 1 tablespoon ground black pepper 1 tablespoon kosher salt 1/2 tablespoon 5-spice powder 1/4 teaspoon ground cinnamon 1/4 teaspoon ground clove 1/4 teaspoon ground star anise 1 skirt steak, cut into 3 or 4 pieces Rice Bowl: 1 large egg Ice 1/4 head radicchio, chiffonaded 1/2 English cucumber, sliced thinly on a mandoline into 3 slices and rolled into 3 roses 1 carrot, peeled and shredded on the large holes of a box grater 1/4 red onion, julienned Directions Preheat the oven temp to 400 degrees F. For the rice: Add to a quarter hotel pan 4-inches deep the rice, stock, coconut milk, lemongrass and a pinch of salt. Cover with foil and place in the oven until the liquid is absorbed, 30 to 40 minutes. Fluff and finish with the cilantro. For the sesame glaze: Combine the hoisin, soy sauce, water, sesame oil, 5-spice powder, garlic and ginger in a bowl and reserve. For the steak: Combine the brown sugar, paprika, pepper, salt, 5-spice powder, cinnamon, clove and star anise to make a rub and coat on both sides of the steak pieces. Heat a stovetop grill over medium-high heat and cook the steak pieces on both sides for about 5 minutes per side. Remove from the heat, brush over some of the sesame glaze and rest. Slice against the grain. For the rice bowl: Bring a small saucepot of water to a boil. Add the egg and cook without a lid for 7 minutes. Remove to an ice bath and then peel in the ice bath. Remove and cut in half. Add to a bowl the rice and top with the steak, egg, radicchio, cucumber and carrot and drizzle all over with the sesame glaze.
